Parotta Softener is a specially designed improver for South Indian parotta.Improve easiness of mixing,Improve extensibility of dough,Reduce dough resting time,Improve sheeting properties,Retain size and shape of parotta,Retain softness / freshness of Parotta
1.The recommended dosage is 0.5% of flour (5 g for 1 Kg maida).
2.Mix improver with flour, then follow standard recipe of Parotta.
3.Rest the dough for minimum Half hour and maximum 2.5 hrs for desired softness.
4.If more resting time is required, minimize the dosage to 0.2-0.3% of flour.
